Fast slow food.

There are many reasons that preserving, canning, freezing, drying food for future use will come in handy.  There could be an power outage.  (Check)  There could be a major snow storm (Check)  The Martians could invade (er...)  Zombies could take over (eek....)  Or, you could just be too lazy and disorganized to actually pre-plan a meal (CHECK). 



Okay, granted it's not a pretty picture.  But if you
squint (alot), it looks almost edible!

My dinner last night was an interesting mix of frozen and canned - zucchini fritters (frozen) over rice (left over refrigerated) topped with salsa (home canned).  It was good and fast - 'cause I had the oven going anyway and was able to fast-thaw the fritters.

Lunch today is vege burger* (frozen - homemade) over mashed spuds (frozen - homemade).  This works because they are tossed in my lunch bag frozen, and are pretty much thawed by lunch time at the office.  Plus, there is a micro at the office, so it is the only time I use one.  Usually, I am more together on the organizational front, and heat it on the stove at home, transfer it to my metal lunch box, and it is still warm by the time I eat it.  I figure, I do the best that I can.  And if the Twinkies and fast food I scarfed down in my misspent youth haven't killed me by now, I will chance the occasional zapped foodstuffs.

I rest my case.



*Another one of those - "Gee, that looks good!  I think I'll make it!"  Over two days later, it was done.  Never to be replicated in my kitchen.

We figure that we save around $4,000 each year (for 2 people) ... just by not eating out at lunch.

Sometimes lunch gets very creative but I don't re-refrigerate anything once I get to work so the nuke time is much much less than if it was started out cold. Usually less than 60 seconds.

And yes, we too cook things that are never duplicated because we don't pay attention as we go, but it usually turns out delicious, just can't replicate it later.

Zucchini fritters sound really good! Don't feel bad about the occasional microwave use, we all gotta do what we gotta do, especially when those dreaded Zombies are scritching at the door. ;)

Packing a lunch every work day can be such a pain! But I'd eat any of them that you mentioned. I've always liked leftovers . . . the flavors have a chance to blend and get "gooder." Even though we're both home for lunch (and breakfast and dinner, for that matter), we still come up with some strange meals from the fridge. I love cold food but hubby must have his warmed. (Unless it's something like a PB & J, of course.)

I'm impressed that you take your lunch to work, in a metal lunch box no less. I wish I could get myself together enough to do this. Last year the 12-year-old begged to take lunch to school and I could hardly manage to keep enough food in the whole house to cover it, never mind in the freezer. This is what school lunch is FOR I said. But the child wouldn't budge. Sigh. I am such a mess.

I LOVE leftovers. Not sure if I just like to eat, or I like not having to make supper that day (or the day after, or the day after that).

DFW - It amazes me that the folks I work work with plunk out at least $7 a day for a salad! OMG. I just couldn't. Plus, they are always in my office looking at my lunch and wanting one like it. Well, almost always.

Candy - I know! When it comes to Zombies vs. Microwaving, it's microwaving hands-down! :)

Mama Pea - Are you sure we are not twins, separated at birth? I would rather eat EVERYTHING cold! Even when I could eat pizza, I would prefer it the next morning. I like to think that my leftover concoctions are more like 'fusion' than odd...

TM - I am all about gadgets. I saw one of those stacking metal lunch boxes and had to have one. I love it. And my insulated bag. And my insulated soup thermos. And... How great is it that your child WANTS to take lunch to school!

Carolyn - I love them, too. And I can eat the same thing pretty much three or four days in a row. Then I need to move on...
