A Zucchini Kind of Weekend

I fall victim to zucchini longing every single summer.  I can.not.wait for the first one.  But, there is never just ONE.  Not to mention well-intentioned neighbors who slip giant squash in my mailbox.  So, I decided to tackle some of the larger zukes this weekend.

Zucchini Boats

Stuffed with ground pork, onion, garlic and (something I have a lot of) chopped Swiss chard.  I also managed to top it with cheddar cheese, just because I could.  Delish.

Zucchini Fritters

I was inspired by Carolyn at Krazo Acres and yep - they are tasty!  I have had them for breakfast, lunch and look out dinner!

Summer Squash Casserole














This is a summer stand-by. I made this to take to my friend Els' commemorative gathering this afternoon. As it involves an entire bag of herb stuffing/dressing (depending on where y'all are from) and a stick of melted butter, how bad could it be?

I have never made zucchini boats, and yours not only look dee-licious, buy fun! Although, how do you serve them? Do you slice them into more manageable chunks or does everyone just scoop a bunch of stuffing & zucchini onto their plate?

We actually had zucchini fritters last night (and for breakfast!).

Got your recipe (thanks), but unless I make some homemade breadcrumbs, I'll have to wait until No-Spend Month is over so I can go buy a big bag of stuffing / dressing to make it. I'm prettu sure the squash will still be around, I've even seen more blossoms! At least something is producing in this weather.

Zucchinni boats? They look amazing. And fun. I think you could get KIDS to eat this without any problem.
All I've done so far is grate and freeze my zuchinni-I'll have to save a few for this!

Looks really good! That casserole looks heavenly. I really have never made a zucchini casserole. You have inspired me to try one.

I have a breakfast recipe for zucchini boats stuffed with zingy scrambled eggs that is yummy. Everybody gets a whole zucchini boat on their plate.

You sure are doing a great job of eating fresh . . . and VERY local!! ;o}

Oh gosh, those photos looks so, so yummy! My mouth is watering but unfortunately, I didn't plant any zucchini!

I went over to Krazy Arcres and looked at that recipe-I guess I can manage it-harvesting season and not much time to take advantage but thats OK.I will be looking back at this summer fondly but sadly. I'm trying to get as many photo's as possible of hubby, got a good one today of him holding katelynn on his knee sand ready to eat my first red tomato.

Carolyn - Depending on how large the "boats" are, I cut them into chunks. Your recipe for fritters was the best!

Sue - It's an unusual child that will eat zucchini unless it's totally disguised! I will be grating a freezing a lot, too.

Jane - The zucchini casserole recipe I use is a vegetarian dish. It is my favorite way to use summer squash and it feeds a crew.

Mama Pea - Heehee, yes, that's about as local as I can get! How about sharing that breakfast boat recipe? It sounds wonderful.

Leigh - Too bad we don't live closer - I'd slip a few (dozen) in your mailbox!

Judy - I can highly recommend Carolyn's recipe. I'm so sorry this year has been such a year of sadness for you. Make memories while you can.

I have three zukes sitting on my counter now and have yet to make a boat this year. Thanks for the reminder and now I'm hungry!
